We're cruising on the Carnival Valor in December. How is the ship & what excursions are best?

We're thinking about tubing in Belize. Maybe parasailing somewhere. I would like to swim with dolphins... not really interested in the sting rays. Our ports are Grand Cayman, Belize, Isla Roatan (Mahogany Bay) & Cozumel.
